Creamy Sundried Tomato Vegetable Pasta
Time: 30 minutes
Servings: 2

1 cup penne pasta
1 head broccoli florets
1/2 clove garlic
1/2 onion
1/2 bell pepper
3 sundried tomatoes in oil
1/2 cup vegan cream cheese
1 tbsp sundried tomato oil or olive oil
1/2 tsp garlic powder
1 tsp red pepper flakes
1 tsp salt

1. mince garlic, and dice onion, broccoli, and pepper
2. boil and drain pasta
3. sweat broccoli, garlic, onion, bell pepper
4. combine cream cheese, oil, red pepper flakes, garlic, and salt
5. add pasta and cream cheese mixture to vegetables
6. add water to thin out the sauce as needed
